- 3 guajillo chilies, deveined and soaked
- 2 pasilla chilies, deveined and soaked
- 3 tomatoes, roasted
- 3 cloves garlic
- ½ onion
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 ear of corn, cut into rounds
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro and lime for garnish

1️⃣ Prepare the Pork:
- Rinse the espinazo de puerco and place it in a pot with water. Add a little salt and bring to a boil. Skim off any impurities. Let simmer for about 30 minutes until tender.
